The boiling process continues until the sugar sets. During this process, citric acid, which is also one of the important elements, is added. Towards the end of boiling, citric acid is added.
The malt is immediately poured into spherical cylindrical boilers. The gypsophila juice is added and heated rapidly to 130-140oC and stirred vigorously. At the end of the mixing, the malt turns white, soft, and sponge-like with the effect of gypsophila juice. The resulting malt is called “bleached malt (viscous mixture)”. When the malt reaches the desired consistency, it acquires a white foamy and viscous but brittle structure when cooled. The bleached malt (viscous mixture) cooled to 70-80oC is poured into the tahini standing at the same temperature in a separate boiler in a 1:1 ratio and the mixing process is carried out. The key point to be considered here is to adjust the sugar ratio in the tahini and malt mixture in accordance with TS 2590.
Considering the halva production method and the elements used, when the oil in its composition is not fully emulsified, it can leak out of the halva, deteriorating the quality of the product and causing packaging costs. Therefore, emulsifiers have a very significant role in halva production in preventing oil leakage.
Among the halva production steps, tahini and viscous mixture, which are taken into the kneading bowl at the shoveling stage, should be mixed homogeneously with the addition of emulsifiers or flavorings such as hazelnuts, peanuts, and cocoa. The most important factor here is the mixing technique. The mixing process is extremely important as this is where the sugars in the viscous mixture are stretched like chewing gum, and the mixture absorbs the tahini and traps it in its structure. The shoveling process ends when the mixture completely absorbs the tahini.
The end of this process is when, if the mixture is checked by hand at this stage, the sugars cannot be felt by hand and the structure resembles an elastic dough. The finished product can now be partially called halva.
